Christmas Cookies

Ok, usually I am the one hovering behind the cook and ‘sampling’. When my Mom used to make cookies… Ok, when I was HOME to enjoy the fact that my Mom made cookies, I would beg for a beater for the raw cookie dough. YUM!

So, this year… I decided that I would try a few EASY recipes for some family gifts. This one I just tried, compliments of Jeannine. I had a blast just making it. I ate tons of chocolate chips (usually I get carob chips at Golden Spoon and MAN, the real thing is AWESOME!) and sampled a little bit of everything. Then I got to lick the bowl. Yum! The whole bowl for me! Ok, I really just did it once and put it directly in the sink and poured water and soap so I would be tempted anymore. 🙂

Rocky Road Recipe

1 pkg Nestle’s Tollhouse Semi-Sweet Chocolate Morsels
1 pkg Nestle’s Butterscotch Chips
1 cup Peanut Butter
1 10 oz bag of mini marshmallows (I don’t use the whole bag usually)
If you would like to add chopped peanuts so it is truly rocky road it is your option…

Put first three ingredients in microwavable bowl on 2/3 power for 5 minutes.
Remove bowl from microwave.
Stir until creamy.
Add marshmallows and mix just to cover them.
Spread in pan and refrigerate.

You will want to refrigerate until the batter is hard like candy (a couple of hours), then you cut into squares like Rocky Road fudge. If you are not a big peanut butter fan, you might want to put less than 1 cup of peanut butter.

They are refrigerating right now so I will try and poison the poker guys tonight to make sure they turned out ok. 🙂 I’m making two more variations tonight, I will let you know the recipes later!
